Ingredients

1 each (3.4oz) vanilla pudding mix
1 (14oz) can Eagle Brand® Sweetened Condensed Milk
1 cup water
2 cups heavy cream, divided
1 1/2 cups assorted fruit, chopped (we like mango,
strawberries, and blueberries)
Optional: food coloring

Instructions

Place vanilla pudding mix, sweetened condensed
milk, water, and (1 cup) heavy cream in a large bowl.

Whisk the mixture together for 2 minutes, cover, and
refrigerate for 10-20 minutes, or until the pudding has
thickened.

While the pudding is resting in the refrigerator, place
the remaining 1 cup of heavy cream in the bowl of an
electric mixer fitted with the whisk attachment. Whisk
until stiff peaks form.

Once the pudding has thickened, spoon the whipped
cream into the mixture, and gently stir (or fold)
together until blended.

If working with multiple fruit options, divide them into
1/2 cup portions.

Divide pudding and fruit between cups or jars,
creating layers. Cover the jars and refrigerate until
ready to serve.

*If you would like to make colorful fruit pudding, divide
the pudding between multiple bowls, add a drop or
two of your desired food coloring (we like pairing like
colors with the fruit we are using, i.e. strawberries and
red food coloring), whisk until blended.

Layer the colorful pudding either by creating separate layers with the fruit or by combining the pudding
and the fruit.
