Ingredients

  • 1 teaspoon baking powder
  • 1 cup butter
  • 1/3 cup chopped maraschino cherries, well drained
  • 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
  • 3 large eggs
  • 1 1/3 cup all purpose flour
  • 1 teaspoon salt
  • 1/3 cup semi-sweet chocolate chips
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  • STIR together flour, salt and baking powder in small bowl. Beat butter and sugar in large bowl with electric mixer on medium speed until fluffy. Add eggs, one at a time, beating well after each addition. Beat in 3/4 cup sweetened condensed milk and vanilla. Gradually add dry ingredients to butter mixture. Spread batter in prepared pan.
  • HEAT oven to 325°F. Coat a 8 x 4-inch loaf pan with baking spray with flour.
  • BAKE 1 hour or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove to wire rack to cool completely.
  • COMBINE remaining sweetened condensed milk and chocolate chips in small microwave-safe bowl. Microwave on HIGH power 45 seconds or until mixture is smooth when stirred. Spoon over cooled cake.
