Pumpkin Spiced Oatmeal Cookies

Ingredients

1 Tsp baking soda

1 cup of softened unsalted butter

1/2 cup brown sugar

1 cup of sugar

2 cups flour

2 eggs

1/2 cup pumpkin purée

1 Tbsp vanilla extract

1 Tbsp baking powder

1 Tsp cinnamon

3 Tsp pumpkin pie spice, divided

2 cups chopped oats

1 (14 oz) can of Eagle Brand® Sweetened Condensed Milk

2/3 cup of powdered sugar

Instructions

Preheat the oven to 350F.

Into a large mixing bowl add sugar, brown sugar, and butter. Mix thoroughly.

Add to the mix the eggs, pumpkin purée, and vanilla extract.

Into a medium mixing bowl add the flour, 2 Tsp pumpkin pie spice, cinnamon, baking powder, baking soda, and chopped oats. Mix together.

Using an ice cream scooper, scoop cookies onto a baking tray and bake for 12 minutes.

While the cookies bake make the glaze. Into a small bowl pour in the sweetened condensed milk followed by the powdered sugar, and 1 Tsp pumpkin pie spice. Mix together.

Allow cookies to fully cool before glazing the cookies. Enjoy!
