Ingredients

  • 2 1/2  cups of flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp pumpkin pie seasoning
  • Pinch of salt
  • 1 1/4 cups pumpkin puree
  • 1 stick of softened unsalted butter
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 14 oz can of Eagle Brand® Sweetened Condensed Milk
  • 2 sticks of softened butter
  • 1/4 cup maple syrup

 

Instructions

  • Preheat the oven to 350F.
  • Into a large mixing bowl add the flour, baking powder, baking soda, and pumpkin pie seasoning. Set aside.
  • Into a stand mixer cream together 1 stick of unsalted room temperature butter, sugar, and brown sugar. Add in the pumpkin puree, 1 egg, and 1 tsp of vanilla extract. Beat together.
  • Slowly pour in the dry ingredients with the mixer on low until fully incorporated.
  • Use an ice cream scooper to scoop rounds of the dough onto parchment paper.
  • Bake for 18 minutes, or until fully cooked through.
  • To make the maple frosting add to a stand mixer 2 sticks of room temperature unsalted butter. Cream the butter for 10 minutes or until doubled in size.
  • Slowly pour in the 14 oz sweetened condensed milk while the mixer is on medium speed.
  • Finally, pour in 1/4 cup of maple syrup and give it one final mix.
  • Frost the cookies with the frost after the cookies have completely cooled then enjoy!
