Maple Pie (No-Bake)

Ingredients

  • 1 pre-baked pie crust
  • 1 can (14oz) Eagle Brand sweetened condensed milk
  • 2/3 cup pure maple syrup
  • 2 eggs
  • 1 cup pecans
  • 1 cup unsweetened shredded coconut flakes

OPTIONAL TOPPINGS: Additional coconut flakes, chopped pecans, and whipped cream

Instructions

  • In a small saucepan, add sweetened condensed milk, eggs, and maple syrup. Whisk until smooth and place on medium heat.
  • Whisk consistently on medium heat until your mixture begins to thicken, about 7 to 10 minutes.
  • Once your mixture has thickened, remove from the heat and add pecans and shredded coconut flakes. Mix until smooth before adding to cooked piecrust.
  • OPTIONAL: Add some additional coconut flakes and chopped pecans to the top of the pie before refrigerating for a finished look.
  • Allow to cool completely before placing in the refrigerator to set overnight.
  • Pie is ready to serve once the pie is completely set.
  • OPTIONAL: Top with whipped cream and chopped pecans.
