In a large bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix until all of the coconut is covered and the mixture is thick.
Form about 2 tablespoons of the coconut mixture into a log shape, flattening them just slightly. Once all of the candy bars are shaped, pop them into the freezer for 30 minutes.
Melt the dark chocolate and coconut oil and stir until smooth. Dip the chilled coconut logs into the melted chocolate, flipping a few times making sure it’s completely coated. Place onto a parchment paper lined baking sheet. Repeat with all bars. Allow the chocolate to harden and set.
