1 (14-ounce) can Eagle Brand® Sweetened Condensed Milk
2 teaspoon lemon zest
3 large eggs, separated
1/3 cup lemon juice
2 tablespoon all purpose flour
1 (9-inch) unbaked pie crust
Yellow food coloring, if desired
HEAT oven to 375°F. Bake pie crust 10 minutes; remove from oven. Reduce oven temperature to 350°F.
COMBINE sweetened condensed milk, egg yolks, lemon juice, flour, lemon peel and food coloring, if desired in large bowl; mix well.
BEAT egg whites in small bowl until stiff but not dry; fold into lemon mixture. Pour into prepared pie crust.
BAKE 25 minutes or until set. Cool. Serve warm or chilled. Garnish as desired. Store leftovers covered in refrigerator.
